I thought I'd start a thread asking how people are finding their week of Unleavened Bread going. Ours is going nicely. I was shocked to find that we didn't have nearly as much leaven to remove this year as in previous years - our move away from processed foods has come a long way.
It is going well. So far I haven't had any major cravings, but I'm trying to stay away from the grocery store so I don't have to see all those wonderful cakes that tempt me so.
I miss bread the most in the morning as my standard breakfast is homemade whole wheat toast. I have been having Matzah toasted with cheese.
I made another apple Matzah kugel last night (the one at Passover was quickly eaten) that we had hot with ice cream. Tonight I am making a Matza Pizza from The Passover Gourmet by Nira Rousso. The cookbook appears to have many good recipes. I have never tried this before...you wet the Matza, mix with oil and eggs and bake, then add sauce, topping and cheese and bake again for 15 minutes.
I am trying to add Matzah and fresh parsley to as many dishes as I can, to remind us of our wonderful Passover dinner and really make this week memorable.
I have a big bunch of parsley in a vase that I put out on Passover and is still there as a nice visual reminder.
So, so far, so good but I am already planning what kind of wonderful treats I can have after Unleavened Breads is over!
Shalom Lisa!! And Celia, Our week is going well too. On the second day of Unleavened, there was a staff meeting at my work. (first day back) I brought in baklava that I had made for Pesach. Everyone loved it. Of course there were bagels here at the office and I promptly put one in the toaster.... DUH.... Then while it was toasting I thought, DUH you can't eat this. So I threw it away after it had toasted. We had roasted goat, (chose from the herd instead of the flock this year) Turkey (for those who do not like goat) ****but everybody did like the goat!! So I made left overs with the turkey, enchiladas with unleavened tortillas. We also had strawberry short cake using my sweet unleavened bread. YUMMY. Hey Celia, your apple matzo recipe sounds great. I made my baklava with stevia and honey. We used no refined sugar in any of the recipes. Lisa, we too didnt have much leaven to clean out this year. I actually bought crackers just so the kids could dispose of and feed to the chickens prior to Pesach. I really had to work at using up my Krusteaz making scones, pancakes, biskets, and shortbread for a couple of weeks prior. That is pretty much my one mix. Anyway, Thanks Lisa for the card!! Our week is going pretty well. We had a few episodes early on with my daughter not being thrilled over it. This is the first year that we've kept it in our home (normally we simply have the seder the first night with my in laws and then we're back to "normal" - not this year!) I was very surprised at home little we had to clear out of the house as well. I guess since I had it in the back of my mind we just didn't bring as much in. I have to say that making challah is something that I look forward to each Friday, so I'm missing that already. It's just so relaxing for me and time when I can focus on what we want to read or study, etc. It's so much a mindset thing for me. I guess I"m going to have to find some good recipes for tomorrow to take my mind off of it! :) I've really enjoyed this week. It's brought so many wonderful things into the front of it all for me.... a great reminder and though provoker among other things. I've been blessed and each would have been enough alone, to carry on that theme. :)
Shalom, Well now Pesach is over I am looking forward to leavened bread! I know Scripture is clear that we are only required to eat unleavened for 7 days, but realistically we must eat it for at least 8, given that there would be no leaven in the home it would take at least another day (actually more without the ability we have in modern times to go buy some) to get any leaven going. Since the day after the 7th day of Pesach was a Sabbath, we were not going to be baking bread on Shabbot anyway..... But we are counting the Omer.
